4 Cornish Hens, thawed
For each hen:
1 square of foil, 16 inches at least
1/2 t salt
dash of pepper
1/4 t sage or thyme
1 sprig parsley
1 to 2 t butter

Directions:
Directions:
Preheat oven to 350. Season each hen with salt, pepper, sage or thyme. Place in foil, lay a sprig of parsley on top of hen and wrap securely in foil. Place hens on baking sheet or in baking pan. Place in oven for one hour. Remove hens and raise heat to 425. Carefully open foil (watch out for escaping steam) to expose hens. Brush with butter and return to oven to brown for 5-10 minutes. Serve with juices accumulated in foil.
