3 large shallots, sliced
1 bunch scallions, chopped
1 1/2 lb. mushrooms, sliced
1 small celeriac, diced
1 lb. potatoes, diced
1/2 lb. carrots, sliced
2 qt. water
2 Tbsp. paprika
1 1/2 tsp. parsley
1 1/2 tsp. dill weed
1 1/2 tsp. ground juniper berries
1 tsp. ground bay leaf
1 tsp. ground caraway seed
2 tbsp. maple syrup
salt to taste
1 c. non-dairy sour cream (opt.)

Directions:
Directions:
Prepare all veggies, and start cooking them in a large pot with the water. Add all the herbs and seasonings. To grind herbs that you cannot obtain in a ground form, use a coffee grinder. Simmer until vegetables are tender. Remove from heat. Last, add dairy free sour cream or homemade vegan mayo to make it creamy if desired.
