6-8 medium squash, sliced
1 medium onion, sliced
12 single crackers, crushed
1 egg
3 T. butter
1 cup grated sharp cheddar cheese

Topping--
1/2 cup grated sharp cheddar cheese
8-10 crackers, crushed

Directions:
Directions:
Preheat oven 375º. Cook covered, squash and onions in a small amount of salted water. Drain and mash (just enough to breakup the pieces. You don't want it mushy). Add egg, butter, and crackers. Adjust salt and add pepper is desired. Pour into buttered (or Pam) casserole dish. Mix additional cheese and crackers-- enough to cover top of casserole. Bake for 30 minutes. Note--I don't measure the ingredients (squash, onions, etc.) Depending on size of casserole you want, you can adjust the ingredients--more or less squash, onions. A large casserole may need 2 eggs and more crackers and cheese. Learn to cook by tasting!
