For a 6-muffin tin:
9 eggs
your choice(s) of anything you like in an omelette:
cooked bacon, sausage, ham
chopped peppers, onion, mushrooms, spinach, asparagus, broccoli, tomato
shredded cheese of your choice
salsa
salt
pepper

Directions:
Directions:
Preheat to 350º
Spray muffin tin liberally with non-stick spray.
Beat eggs well.
Add your choice of ingredients to the eggs and combine.
Pour egg mixture into muffin tin and place tin on a baking sheet in the center of the oven (or add your choice of ingredients into the muffin tins and pour eggs over, filling no more than 2/3 full)
Bake 20 to 25 minutes until set.
Cool slightly before removing from tin.
