1/4 cup Bacon Grease or Vegetable Oil
1 large Egg
2 cups Self Rising Cornmeal Mix
1 to 2 tablespoons sugar (optional)
1-1/2 cups Buttermilk or 1-1/4 cups milk

Directions:
Directions:
Heat oven to 425º. Put bacon grease or vegetable oil in a 10 inch round ovenproof skillet or round or square baking dish. Place in oven to heat for about five minutes.

Whisk egg in medium bowl. Stir in cornmeal mix, sugar, buttermilk and hot oil from the skillet (leave a small amount of oil in the skillet). Pour batter into skillet.

Bake 20 minutes or until a toothpick inserted into center comes out clean.

Kind of let your 1/4 cup of grease spill over a little so that you have enough to leave some in the skillet. Cast iron skillet is best!
