Black Bean Enchilada

2 cups homemade enchilada sauce
2 T olive oil
1 cup chopped red onion
1 red bell pepper chopped
1 bunch broccoli florets and sliced into bite size pieces
1 t. ground cumin
5-6 ounces baby spinach ( 5 cups packed)
1 can black beans, drained and rinsed
1 cup monterey jack cheese
salt
pepper
8 tortillas

SAUCE
3 T olive oil
3 T flour
1 T ground chill powder
1/2 t grill powder
j1/4 t salt
pinch of cinnamon
2 T tomato paste
2 cups vegetable broth
1 t apple cider vinegar
pepper and salt to taste



Directions:
Directions:
preheat oven to 400 degrees
lightly grease 13x9 pan
warm olive oil and add onions and salt, cook 5 minutes
reduce heat, add broccoli , pepper, and cover for about 8-9 minutes
add cumin and cinnamon until fragrant and add spinach until reduced in size
transfer contents of pan to mixing bowl and add beans and half cheese
pour 1/4 cup sauce in pan
add 1/2 cup filling to each enchilada
place seam side down
drizzle remaining sauce over enchiladas, sprinkle remaining cheese on top

bake uncovered in middle rack for 20 minutes
- remove from oven and let rest for 10 minutes
