1 Duncan Hines yellow cake mix (not butter)
1 Vanilla Instant Pudding Mix
1 1/3 cup water
4 eggs
1/4 cup oil
2 cups coconut
1 cup pecans, chopped

Icing--
4 T. butter
2 cups coconut
1 pkg. cream cheese (8 oz.)
3 1/2 cups powdered sugar
2 t. milk
1/2 t. vanilla

Directions:
Directions:
Preheat oven 350º. Add cake mix, pudding mix, water, eggs, and oil in large mixing bowl. Beat at medium speed for 4 minutes. Stir in coconut and nuts. Pour into 3 greased and floured (or spray with Pam) 9-inch cake pans. Bake for 35 minutes or until done.

Icing--Melt 2 T. butter in skillet. Add coconut, stirring constantly over low heat until golden brown. Spread on
paper towel until cool. Cream 2 T. butter with cream cheese, add milk and sugar. Add vanilla. Stir in 1 1/2 cups of toasted coconut, saving 1/2 cup to sprinkle on top of cake. Ice cake and sprinkle remaining coconut on top.
