1 red onion, sliced
4 carrots, cut into diagonal pieces
2# small red potatoes, cubed
2 Tbs. fresh chives, chopped
2Tbs. Fresh oregano, chopped
2 Tbs. fresh Italian parsley, chopped
3 cloves garlic, minced
tsp. Salt
tsp. Pepper
2 Tbs. butter, melted
2 Tbs. olive oil

Directions:
Directions:
Preheat oven to 400
Grease or spray large baking pan
Place vegetables on prepared pan.
Mix spices et al., drizzle over vegetables, toss to coat.
Cover the pan with foil, roast for 30 min.
Remove foil, stir, continue roasting uncovered for 15-20 min., or till tender.
