3 tablespoons dark chili powder
1 tablespoon paprika
2 cloves minced garlic
1 large onion chopped
2 teaspoons cumin powder
1 teaspoon red cayenne, white and black pepper
2 tsp dry cilantro,
2 lbs hamburger
1 11.5 oz Spicy V8
1 large can chopped green chiles
1 15 oz crushed tomatoes
1 tsp salt or to taste
2 beef bouillon cubes
2 cups water
1 tsp agave syrup or brown sugar
1 tsp dark cocoa

Directions:
Directions:
Heat dry pan and add spices to release natural oils for one minute.
Sauté 1 med diced onion with spices, add cubed meat (beef round, Chuck, roast) into pan and brown. Drain if excess oil.
Add the rest of the ingredients and bring to a soft boil.
Cover and lower heat for one hour.
Remove cover add 1 tsp agave syrup or sugar and 1 tsp unsweetened dark cocoa and reduce (add beans if using).


(For REAL Texas Chili no beans-- for Yankee Chili add beans (canned during reduction) for dried (pre-soaked) add with broth.) Adjust to taste.
