4lb spare ribs
1 cup brown sugar
½ cup chili sauce
¼ cup ketchup
½ cup dark rum
¼ cup soy sauce
1 tbsp Worcestershire sauce
1 tsp dry mustard
2 garlic cloves,crushed
⅛ tsp pepper

Directions:

1. Cut ribs into bite sized pieces and heat the oven to 350ºF

2. Line roasting pan with a double thickness of aluminum foil and then place the ribs in the pan and seal ribs tightly in foil

3. Bake in the oven for 1 hour, then unwrap ribs and pour off drippings

4. Combine the remaining ingredients to make a marinade and pour half of the marinade over ribs, then continue to bake for 1½hrs until caramelised and slightly crispy and dark around the edges.
