3 eggs, separated
1 2/3 c. buttermilk
1 t. baking soda
1 1/2 c. flour
1 t. baking powder
1 T. sugar
1/2 t. salt
1/2 t. vanilla
3 T. softened butter

Directions:
Directions:
In a mixing bowl, beat egg yolks. Add buttermilk and soda, set aside. In a separate bowl beat egg whites till stiff and glossy, set aside. In a separate bowl, sift together flour, baking powder, sugar and salt. Add flour mixture to liquid. Beat in softened butter and vanilla. Gently fold in egg whites being careful to keep the air in the egg whites. (If you are in a hurry you can skip this step and just add the eggs in whole, but your pancakes won't be as fluffy). Cook on a hot griddle greased with butter.
