800g skinless salmon fillet
1 tbsp olive oil or soft butter
200g spinach
1 heaped tbsp sea salt
Freshly ground pepper
300ml thick (double cream) or milk
100ml dry white wine
4-5 tbsp grated Parmesan cheese

Directions:
Directions:
1. Trim the salmon if necessary, remove any small bones, then cut the salmon into 4 pieces.
2. Grease an ovenproof dish with the olive oil or soft butter.
3. Rinse the spinach well, gently pat them dry or spin them in a salad spinner. Arrange the spinach in the greased dish. Place the fish on top and season with salt and pepper.
4. Carefully pour a mixture of the cream and wine over the salmon and then sprinkle the grated Parmesan on top and bake at 345ºF for 20-25 minutes.

Serve with boiled potatoes.
