1/2 c. shortening or part butter
1/4 c. brown sugar packed
1 egg, separated
1/2 t. vanilla
1 c. flour
1/4 t. salt
3/4 c. finely chopped nuts
jelly or tinted confectioners icing

Directions:
Directions:
Heat oven to 350º. Mix shortening, sugar, egg yolk, and vanilla. Blend flour and salt, stir in. Roll dough into balls. 1 t. per ball.
Beat eggs slightly with fork. Dip balls in egg white. Roll into nuts. Place about 1 inch apart on a ungreased cookie sheet; press thumb into center. Bake 10-12 minutes or until set. Cool. Fill with jelly or icing. 3 x this recipe makes 5 dozen using the small pampered chef cookie scoop.

Bekah Cox (now Rust) shared this recipe with me when she was a teenager. She would make them the JC Christmas party. The Cox girls would make 100's of cookies and put them in the freezer in late November to early December and then Angie would use them for the Christmas season. Always having a plate to share when she had guests or to bless neighbors.
