1 cup butter
1/2 cup white sugar
1 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract

2 cups all-purpose flour
cinnamon, nutmeg & cardamom to taste
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

2 cups quick cooking steel cut oats
1 cup chocolate chips
2/3 cup flaked coconut
2/3 cup chopped walnuts

Directions:

Cream softened butter with sugars; beat in eggs and vanilla. Mix flour, baking soda, baking powder, salt, and dry spices together in another bowl, then stir into butter mixture. Stir in oats, chocolate, coconut, and walnuts.
Let sit for 10 min
Drop by spoonful onto ungreased cookie sheet. Bake for 12-14 minutes at 375ºF (190º C).

optional: mix in dried fruit like bourbon or rum-soaked raisins or dried cherries

These cookies are filling and delicious. The first time we made them was New Years Day at the Divines' home in Napa, when they melted all together into one giant pan cookie. The second time we made them Chris compressed them like meatballs and they didn't spread at all, but came out kind of dry.
BE SURE TO HAVE MILK ON HAND!
