Ingredients:  
Ingredients:  
1 cup couscous
1 ½ cup vegetable stock
¼ cup fresh lemon juice
¼ cup olive oil
1 tsp honey
1 tsp salt
1 tsp fresh ground black pepper
½ cup diced green onion
1 cup chopped fresh mint (1 bunch)
1 cup chopped parsley (1 bunch)
1 cucumber, unpeeled, seeded medium diced
2 cups cherry tomatoes cut in half

Directions:
Directions:
In a saucepan, bring the stock to a boil, add the couscous. Cover and let it sit (approx 10 min).
Chop up the onion, mint, parsley, cucumber and tomatoes, add them to a large bowl.
When the couscous is ready, add it to the bowl and mix.
In a separate bowl mix the olive oil, lemon juice and honey. Pour over the salad.
Sprinkle with the salt and pepper to taste (aprox ½ tsp)

Bernadette, Mom (Patti) and I were amazed at the history Turkey had to offer. The buildings were incredible, as was the food. At every buffet in the middle eastern countries there was tabbouleh. It quickly became my go to. Although traditionally it is made with bulgar, I have a hard time finding it in stores and it’s a little heavy. I like it best when made with couscous.
