One pkg. Bear Creek Country Kitchens Tortilla Soup Mix (soup aisle of grocery)
3-4 cooked boneless chicken breasts (season and microwave or bake)
3-4 cups of chicken broth
Small whole onion and 3-4 garlic buds (Chop fine and saute in small amt. of olive oil.)
1/2 diced green pepper
2-3 chopped medium raw potatoes
3-4 chopped raw carrots
1 can of diced tomatoes
1 can of black beans
1 can of whole corn
1 4 oz. can of chopped green chilies
1 8 oz. can of tomato sauce
1 tsp. cumin
juice of 1 fresh lime, to taste
small amt. of chopped fresh cilantro, to taste

Directions:
First: In large soup pot add 8 cups water to chicken broth and bring the 10+ cups of liquid to boil. Whisk in pkg.
ingredients and cook/simmer uncovered as directed on soup package.

Second: Microwave raw vegetable ingredients in covered glass bowl with small amt. of water and add to soup pot.

Third: Shred or chop the cooled cooked chicken and add to soup pot.

Fourth: Add canned tomatoes, beans, corn, tomato sauce, lime juice and chopped cilantro.

Fifth: Let simmer another 15-20 minutes.

When serving, may garnish individual servings with sour cream, grated cheddar cheese, tortilla chips etc.
