1 pkg. Honey Graham Crackers (1 1/4 c.), crushed
1/3 cup butter, melted
1/4 cup sugar

4 eggs, separated
1 cup sugar
1 t. vanilla
1 pint (16 oz.) sour cream
3 pkg. of cream cheese softened (8 oz. each)

Preheat oven to 350º. Grease bottom and sides of a 9-inch spring form pan generously. I use hard shortening, like Crisco. Crush crackers between wax paper until fine. Melt butter and combine with crackers and sugar. Press this mixture into bottom of spring form pan--press hard. Beat egg whites stiff and set aside. In large bowl, combine cream cheese, egg yolks, 3/4 cup of sugar, and vanilla. Beat until smooth. Fold in egg whites with spatula. Put mixture into spring form pan (I usually set this on a cookie sheet to bake) and bake 40-50 minutes or until slightly brown. Remove from oven and increase oven temperature to 475º. Mix sour cream and 1/4 cup of sugar. Pour over cooked cake. Return to oven for 5 minutes. Cool. Refrigerate for 12 hours.
