1 cup white sugar
3/4 cup vegetable oil
1/2 can pumpkin
2 eggs
1 1/2 cups flour
1 tsp baking powder
1/2 tbl cinnamon
1/2 tsp salt
1 tsp baking soda
brown sugar to taste
mini chocolate chips (optional)

Directions:
Directions:
1. Preheat oven to 375 degrees
2. Beat together white sugar, oil and pumpkin and eggs.
3. In a separate bowl, mix together flour, baking powder, cinnamon, salt and baking soda.
4. Combine both mixtures and beat until well mixed. (Stir in mini chocolate chips if desired).
5. Line muffin pan with paper cups and fill. Sprinkle brown sugar on top.
Bake for 15 - 20 min
