6-8 boneless/skinless chicken breasts
2-small box frozen spinach
1 ½ cups “Fresh” Parmesan or Asiago cheese (not Kraft in a can)
16 oz. bag mozzarella cheese
Stick of butter
8 oz. Cream cheese(whipped is best)
1 cup whipping cream or half in half or milk
essential lemon oil
( all ingredients can be substituted w/low fat or dairy free products)

seasonings
Garlic
Salt
Pepper
Nutmeg
( I use Tastefully Simple garlic garlic seasoning- YUMMO!)

Directions:
Directions:
Filet chk breast down the middle of under part of breast and then each side so to make a pocket to stuff it
Sprinkle inside of breast w/ garlic seasoning
Mix spinach & mozzarella together
Sprinkle w/ 1/2 tsp. of salt & pepper - mix
Stuff each breast w/ approximately 2 tbs. of spinach mix
roll up and place open side down in baking pan-
Add 1 -2 drops of lemon oil on each breast
cover & bake at 350º for 1 hr

Alfredo sauce
Melt butter in pan along w/cream cheese
Add whipping cream -half & half or milk
1 cup of Parmesan or Asiago Cheese
Stir until smooth & creamy

Put your chicken breast on a serving dish / spoon sauce over breast’s add extra cheese and sprinkle w/ nutmeg
“Mangia ” Enjoy!

This is a very yummy dinner- tastes like you slaved over the stove all day! It’s so easy & everyone loves it! I was served this many years ago at a special event- loved it so much I figured out how to make it- added/ changed some special ingredients over the years & it continues to get better & better. I.e.: garlic seasoning & essential oils

Fresh warm Italian bread & asparagus sprinkled w/ lemon oil -slivered almonds & Asiago cheese are great sides
