2 lb very lean top rounds steak
1 ox flour
salt and black pepper
3 tbsp. oil
1 clove garlic skinned and crushed
1 onion skinned and sliced
2 sticks of celery trimmed and chopped
Seasoning:
1/4 pt burgundy
1 pt beef stock
4 stoned black olives
2 carrots pared and sliced

Directions:
Directions:
Remove fat from the meat. Cut into 1 1/4 inch cubes and toss in seasoned flour. Heat oil in large frying pan and brown the meat all over. Transfer to an ovenproof casserole. Lightly fry the garlic, onion, carrots and celery then transfer to the casserole. Stir any remaining flour into the frying pan. Pour on the burgundy and stock and bring to a boil stirring all the time. Pour over the meat, cover and cook in the oven at 325ºF until the meat is tender, about 2 /12 hours. Skim any excess fat from surface of casserole. Add seasoning to taste and stir in the olives. Return to the oven for a few minutes to heat the olives. Serve with croutons of fried bread.
