2 lbs. chicken breasts
1 tsp. salt - watch!
1/4 tsp. pepper, divided
1 tsp. olive oil
2 Tbls. garlic, minced
2 Tbls. onion, grated
1/4 c. white wine
4 Tbls. tomato paste, divided
1 Tbls. Italian seasong
3 tsp. crushed red pepper flakes
2 (14.5 oz.) can diced tomatoes, drained
1/4 c. sliced, pitted olives
2 Tbls. chopped parsley

Directions:
Directions:
Sprinkle chicken with 1/2 tsp. salt and 1/8 tsp. pepper. Heat oil in skillet - brown chicken 2 min. on each side.
Put in slow cooker. Add garlic and onion to pan - saute 30 sec. Add wine. Cook 30 sec. Put all in slow cooker with 3 Tbls tomato paste, seasonings, and tomatoes.

Cook on high for 3-4 hours until chicken becomes easy to shred. Add more salt to taste, and add pepper. Add olives, 2 Tbls. tomato paste, and parsley.
