1 cup semisweet chocolate chips
½ cup peanut butter
1⅓ cup icing sugar, sifted
1 tbsp butter
¼ tsp salt
2 tsp instant coffee
⅓ cup boiling water
1 tsp vanilla
1 egg, beaten
3 cups (approx 48) unsalted crackers, crushed

Directions:

Melt chocolate chips over hot water, blend in peanut butter. Mix butter, icing sugar and salt. Combine coffee and boiling water, stir in chocolate mixture, remove from heat and cool. Stir in vanilla, beaten egg, and crushed crackers and mix well. Pack in buttered baking pan and chill.
