1 cup flour. sifted
1 tsp baking powder
½ tsp salt
1 cup water
½ cup butter
3 eggs

Filling:
2½ tbsp flour
½ cup milk
½ cup margarine
½ cup sugar
½ tsp vanilla

Directions:
Grease a cookie sheet. Preheat oven to 425º F. Sift flour, baking powder and salt together. Bring water and butter just to the boiling point, stirring until the butter is melted. Remove from heat and mix in flour mixture all at once. Stirring vigorously, cook until the mixture will form a mass, leaving sides of saucepan clean. Remove from heat and add unbeaten eggs, one at a time, beating after each addition until egg and flour mixture are thoroughly combined. Drop in mounds about the size of an egg, well apart on a prepared cookie sheet. Bake in a preheated oven at 425º F for 15 minutes.Then lower the oven to 375º F and bake until puffs are light and delicately browned, about 25 minutes longer for average sized puffs. Turn off oven and leave door open to allow puffs to dry a few minutes. Makes 1 dz.

For the filling, mix flour and milk in a saucepan and cook until like a paste. Cool this mixture. Cream margarine and sugar, beat until light. Add vanilla. Gradually add the paste. Beat 5 minutes until light.
