2 Cup onions, chopped
2-3 Tblsp curry
4 Tblsp butter
Saute over low heat for 25 minutes.
Add:
3 lb (3 medium squash) butternut, peeled and chopped
6 cup chicken broth
2 apples, chopped with skins
Cook about 25-35 minutes or until soft.

Directions:

Put through blender until pureed.
Option: serve with fresh ground Parmesan cheese and croutons.

This is a delicious recipe that was introduced to us by Aunt Melissa Youngman once when they were visiting from Michigan. She came to my kitchen and together we made the soup. It became a winner.
