Homemade Souvlaki Recipe

1.5 lbs Pork (I use pork loin)
¼ cup Lemon Juice
¼ Olive Oil
4 cloves garlic, minced
1 tbsp Oregano
¼ tsp Salt
¼ tsp Pepper

Directions:
Directions:
1) Mix all ingredients together except the pork. Set aside.
2) Cut pork into small cubes. (Smaller cubes will absorb more flavour and cook faster)
3) Place pork in a marinating container or bag and pour marinade over meat. Seal and refrigerate for a minimum of 2 hours, maximum of 24 hours.
4) Preheat your grill to medium-high heat.
5) Make souvlaki sticks by skewering the cubes of meat onto wood or metal skewers.
6) Grill souvlaki for 4-8 minutes (depending on cube size, smaller pieces cook faster) turning every minute or two to ensure even cooking
7) Souvlaki is ready when the internal temperature reaches 145º in the largest pieces and meat no longer looks pinkish and smooth in side.
8) Serve on skewers accompanied by rice pilaf or seasoned potato wedges and a salad or in a pita garnished with fresh iceberg lettuce, tomatoes, white onions, kalmata olives and cucumber strings/strips.
9) I recommend Fontaine Santé Sour Cream Tzatziki as a sauce for either skewers or pita.
