1 lb. leftover lean pork cut in 1" cubes
1 tbs. oil
Red onion diced to taste
¼ tsp. pepper
3 cloves garlic
1 Green Pepper cut in 1" squares
1 carrot, peeled, sliced at a 45º angle in thin ovals
½ cup water
1 tomato chopped
1 green onion diced
1 8 oz. unsweetened pineapple chunks, drained; reserve ½ juice
2 cups cooked white rice or rice of your choice

Sweet & Sour Sauce
¾ cup vinegar
¾ cup sugar
½ cup reserved pineapple juice
1 tbs. ketchup
2 tbs. less sodium soy sauce
2 tbs. Cornstarch
¼ Sherry (optional)

Directions:
Put oil in a heated wok. Add garlic, green pepper and carrot. Stir fry about 1 minute. Pour in water. Cover and steam about 3 minutes or until crisp-tender. Pour in Sweet & Sour Sauce. Add pork and pineapple. Stir gently until meat is heated through and sauce thickens. Serve over hot rice.


Sweet & Sour Sauce

In large measuring cup, combine vinegar, sugar, reserved pineapple juice and ketchup. Heat in microwave for about 2 minutes. Stir to make sure sugar is dissolved. Add cornstarch and sherry.
