3 large Yellow/White
3 T Butter
3 T Light Oil
3 T Flour
1 Tsp Salt
6 Cups Beef Broth
1 Bay Leaf
2 Cups White Wine
1 Loaf French Bread sliced
1-2 Cups Shredded Gruyere, Parmesean or Montery Jack Cheese

Directions:
Directions:
In Large Heavy Pan saute' onions in butter and oil until clear on LOW heat.

Sprinkle flour and salt over onions. Stir well so there are no lumps.

Add broth, wine and bay leaf.

Simmer 45 minutes

Float French Bread on top of individual bowls of soup and sprinkle with cheese

This is very good.
Be very careful with Gruyere cheese once melted, when it is cool to the touch it is still MOLTEN on the inside.
