3 Tbsp. (level) dry yeast
1/2 cup warm water
2 Tbsp. salt
2/3 cup oil
5 cup hot water
2/3 cup honey or raw sugar
3/4 cup wheat germ (optional)
2 cup hig gluten flour
10 cup whole wheat flour

Directions:
Put yeast into warm water and let stand for 10-15 minutes
Put hot tap water in 7 cups whole wheat and high gluten flour in mixer bowl
Mix on low speed until blended
Add salt, oil, honey, and wheat germ. Continue to mix. Add 1 cup flour and yeast mixture and blend thoroughly
Gradually add 3-4 cups more flour. Mix for 10 minutes until dough begins to clean side of bowl.

Oil hands, remove dough from mixer 1/4 at a time.
Mold into loaves on oiled counter.
Place in oiled pans and oil top of loaves
Cover with damp cloth and let rise about 35 minutes.
Bake at 350º
Remove from pan and cool on rack.

At altitude over 4000 ft. bake at 425º for 8 minutes and then 350º for 35-40 minute

This is a great whole wheat flour recipe and one we used for a short time.
We eventually found a recipe that was simpler and ALMOST as good!
