3 c lukewarm water
1 TBS granulated yeast
1 to 1 1/2 TBS KOSHER salt
1 TBS sugar or honey
2 TBS Olive Oil
7 c BREAD flour

Directions:
Directions:
Mix all but flour in a very large mixing bowl. Add flour and stir by heavy wooden spoon or with a mixer. Do not knead. Cover (not airtight) and set on the counter for 2 hours at room temperature until the dough rises and collapses on itself
(or flattens on top).
The dough can be used immediately after its initial rise, though it is easier to handle when cold. Refrigerate it in a lidded (not airtight) container and use for pizza or flatbread over the next 14 days. Or store the dough for up to 3 weeks in the freezer in 1/2 pound portions. When using frozen dough, thaw it in the refrigerator overnight before use.
