2 pkgs. (10 oz.) frozen cauliflower
1 c. water
1½ c. chopped onion
1/3 c. margarine
1/2 c. unsifted flour
3 c. milk or liquid of choice
6 chicken bouillon cubes
2 c. (8 oz.) shredded mild Cheddar cheese
1/8 - 1/4 t. ground nutmeg
chopped green onion or parsley

Directions:
Directions:
In a saucepan, cook cauliflower until tender. Keep 1 cup of cauliflower aside and puree the rest with 1 cup water. In a heavy saucepan, cook the onion in margarine until tender and stir in flour. Gradually add 3 cups liquid (just milk is fine) and bouillon, stirring until it is well-blended and thickened. Add cheese, pureed cauliflower, reserved cauliflower and nutmeg. Cook and stir until the cheese melts and the mixture is hot. Do not boil. Serve garnished with green onions or parsley.
