1 lb. dried Great Northern beans
1 meaty ham bone or 2 smoked ham hocks
3 medium onions, chopped
3 garlic cloves, minced
3 celery stalks, chopped
1/4 c. chopped fresh parsley
1 c. mashed potatoes
salt & pepper

Directions:
Directions:
Soak beans according to package directions. In a large kettle, place beans, ham and 3 quarts of water. Bring to a boil. Reduce heat; cover and simmer for 2 hours. Skim off fat, if necessary. Add remaining ingredients. Simmer for 1 hour longer. Remove meat from the bones, dice and return to kettle. Heat through. Makes 8 - 10 servings.
