4 egg whites
1/2C sugar substitute (e.g. Stevia in the raw)
1/2 tsp vanilla
1/4 tsp salt
2c unsweetened flaked coconut

Directions:
Directions:
Preheat oven 325

Beat egg whites until stiff, add sweetener, salt, vanilla.

Fold in coconut (whites will probably collapse; it's okay).

place parchment on a cookie sheet, spoon macaroons onto parchment using a 1" melon baller or other scoop.

Bake 18-20 minutes at 325, or until golden, turning once.
