Frosted Zucchini Brownies Recipe

2 c.flour
1/3 c. cocoa
1½ t. baking soda
2 c. shredded zucchini
1½ c. sugar
3/4 c. olive oil
1/2 c. walnuts
2 t. vanilla

FROSTING:
1/4 c. butter or margarine
1 c. sugar
1/4 c. milk
1/2 c. semi-sweet chocolate chips
1/2 c. miniature marshmallows
1 t. vanilla
1/2 c. walnuts, optional

Directions:
Directions:
In a bowl, combine flour, coco, soda and salt. In another bowl, combine zucchini, sugar and oil. Add to dry ingredients and mix well. Stir in walnuts and vanilla. Pour batter into a greased 13x9 baking pan. Bake at 350º for 35-40 minutes, or until a toothpick comes out clean. Cool on a wire rack for 30 minutes.
FROSTING: In a saucepan, melt the butter, stir in sugar and milk. Bring to a boil over medium heat, stirring frequently. Boil and stir for 1 minute. Remove from heat. Stir in chocolate chips and marshmallows until melted; add vanilla. Spread over the cooled brownies. Sprinkle with walnuts, if desired.
