¼ lb. shredded swiss cheese
6 slices turkey ham- finely chopped (the original recipe calls for Canadian bacan or ham)
3 TB chopped Chives (I use bottled)
Ground Pepper to taste
8 eggs well beaten
2 TB Butter Melted

Directions:
Directions:
Preheat oven to 375º. Beat eggs with pepper to taste and set aside. Mix together ham, chives, and cheese. Melt butter and brush 24 muffin tin cups with the butter. Place one spoon full of cheese meat mixture into each cup and then fill the cups with egg to just below the edge. Bake until cooked through, about 12 minutes. Remove and let cool. Remove and serve warm. They really are a perfect bite size breakfast to go. I double the batch when I make them for RS brunches because they go so quick. Everyone always wants the recipe. You can spray the pans with cooking spray to cut back on fat but the butter does make them taste extra yummy! They do freeze well too!
