3 cups whipping cream
1/2 cup milk
6 egg yolk
3/4 cup sugar
1 Tbsp. vanilla extract
3/4 cup packed brown sugar

Directions:
Preheat oven to 350°.
Combine cream and milk. Heat over low heat until bubbles form around edge of pan.
In medium bowl combine yolks, sugar and vanilla and wisk together. Wisk in 1/2 cup hot cream mixture.
Return this mixture to saucepan and wisk to blend.
Strain the custard through a fine meshed sieve.
Divide the custard evenly among 6 - 6oz. custard cups.
Set the cups in a baking dish and pour water into the dish to halfway up the sides of the cups.
Bake in preheated oven for 25-30 minutes or until custards are set but quiver slightly when shaken.
To finish, preheat the broiler. Put 2 tbsp. of brown sugar through a small sieve with the back of a spoon to evenly cover each custard.
Place the custards under the broiler, very close to the heat, until the sugar melts and caramelizes 1-2 minutes. Be careful not to let it burn.
Let cool for a few minutes and serve.
