8 lb. beef brisket
2 tsp saltpetre
3 Tbsp. salt
5 Tbsp. pickling spices
5 Tbsp. sugar
1/4 tsp cinnamon
7 cloves chopped garlic

Directions:
Directions:
Rub brisket on both sides with mixture.
Wrap in brown paper and place in fridge.
Turn every 3 days.
After 14 days roast for 5 hours at 325° - add 2 cups of water to roaster.
Turn after 2-1/2 hours.
