1 (16oz.) can salmon, drained, skinned, flaked
1 egg, beaten
⅓ c buttermilk or milk
⅓ c finely chopped onion
¼ c cornmeal
¼ tsp baking soda
Salt to taste
Vegetable oil for frying

Directions:
Directions:
Combine salmon, egg, buttermilk, onion, cornmeal, and baking soda in bowl. Mix well. Shape into 6 patties. Fry in 1½ to 2 inches oil in heavy skillet for about 10 min or until brown on both sides. Drain well.

Mama fried canned salmon patties and they were always delicious! She would add several side dishes and homemade biscuits. I remember eating the patties with LeSeur green peas and mashed potatoes.
