Ingredients: 2 eggs 1 cup mayonnaise 1/2 tsp dry mustard 1 tsp Old Bay seasoning 1 tsp dried parsley 1 tsp dried dill weed 2 cups of 1/4 inch diced white loaf bread with crust removed 2 cups 1/4 inch diced baked potatoes(russets preferred) 1 1/4 lbs of poached and chilled fish,coarsely flaked 2 Tbsp butter devided into 12 patties 2 tsp Old Bay seasoning to sprinkle on the cakes

Directions:In a mixing bowl mix the first six ingredients (this is the dressing). In another larger bowl ,add the diced bread, the diced potatoes and half of the dressing. Stir together until the bread has absorbed the dressing. Add more dressing as needed, the consistency of the mixture should be such that it can be molded and hold its shape. Gently stir in the fish. Add dressing as needed. Drop packed 1/2 cups of the mixture onto a buttered cookie sheet. Make a slight depression in the top of each cake with a table spoon. Sprinkle each cake with Old Bay Seasoning and add a small patty of butter to the top of each cake. Bake in a preheated 400*f oven for 10 to 15 minutes or until they are slightly golden brown. Serve either warm or cold with your favorite tartar sauce. Note: A) A 1/2 cup measuring cup with tapered sides works best for forming the cakes, because when you tap the cookie sheet with the cups the cake will fall out easier.
