12 cups quartered strawberries
1 pkg. powdered pectin
4 1/2 cups sugar
1/4 cup balsamic vinegar
2 Tbsp. coarsely cracked black pepper
1 tsp. fresh chopped rosemary or thyme

Directions:
Directions:
Mix pectin with 1/4 cup sugar. Place strawberries in a large pot and stir in pectin mixture. Bring to a rolling boil over high heat while stirring constantly.
Add remaining sugar and continue to stir until mixsture reaches a foll, rolling boil again. Allow to boil like this, at a full and rolling boil, for 1 minute, stirring constantly.
Remove from heat and use a metal spoon to skim off any foam on top of the berries. Add the balsamic vinegar and black pepper and stir to combine.
Fill 4 hot jars with jam leaving 1/4" of space at the top. Gently tap the filled jars to allow air bubbles to escape. Tightly fasten the lids and boil jars in a canner for 10 minutes.
Add rosemary or thyme while cooking or place on top of jam in jars.
