Ingredients: 3 lb. beef roast (boneless chuck, bottom round, or rump) 2 celery stalks, broken in pieces 4 garlic cloves, crushed 2 bay leaves 1 large yellow onion, quartered 1 tsp. lemon juice 1 tsp. whole peppercorns 1 can low salt beef broth 2 cups water
BBQ Sauce: 1 bottle Ketchup 2 T. vinegar 2 T. lemon juice 2 T. chili powder 2 T. brown sugar 2 T. butter 1 tsp. garlic powder 1 tsp. liquid smoke Reserved broth from cooking beef for thinning sauce

Directions: Put all beef ingredients in crock pot and cook on low for 8 hrs. or until meat falls apart easily. Remove roast and set aside. Strain liquid, discarding solids, and reserve for use as soup stock. Shred meat by pulling apart with a fork. Make BBQ sauce and add to meat. Thin with reserved liquid if too thick.
Serve on large sandwich buns with extra BBQ sauce on the side. |

Notes: Adapted from a recipe by my husband's cousin, Rose Schmidt (aka Chubby). It was my favorite thing for her to cook. She made it on top of the stove in a big stock pot. Use a pot big enough to cover the roast with water and just simmer the beef, DO NOT BOIL it, until the meat falls apart easily when pulled with a fork. May also be made with pork using a butt roast. Plus, you can also use any bbq sauce you like instead of making this one.
