1 1/2 lbs baby potatoes, quartered
2 tablespoons butter
1/2 cup onion, diced
1/2 cup celery, diced
1 teaspoon dried mustard
4 cups chicken stock
1 teaspoon fresh sage, chopped (or 1/2 teaspoon of dried)
1 cup whipping cream
1 cup Cheddar cheese
Cracked black pepper
Kosher salt
Hot sauce (optional)

Directions:

Heat the butter first in a skillet on the stove over medium heat, and sauté the onions and celery until soft. Season with salt and pepper. Once cooked, add the mixture to the crockpot, along with the mustard, potatoes, chicken stock and sage. Cook on low heat for six to eight hours. Don’t worry if the potatoes break up – that just thickens the soup nicely. Finally, add the cream and cheese and mix until the cheese is fully melted and velvety smooth. Adjust seasonings if needed and, if you’d like, add hot sauce to taste.
