1 can crushed pineapple
1/2 c. shortening
1 c. packed brown sugar
1 egg
1 t. vanilla
2 c. flour
1½ t. baking powder
1/4 t. baking soda
1 t. salt
1½ c. Confectioners' sugar

Directions:
Directions:
In a mixing bowl, cream shortening and sugar. Add egg; mix well. Drain pineapple, reserving 3 t. juice. Add pineapple and vanilla to batter; mix well. Combine flour, baking powder, baking soda and salt; stir into batter. Drop by teaspoonfuls 2" apart onto a greased baking sheet. Bake @ 325º for 17-20 minutes or until golden. Immediately remove from baking sheet to cool on a wire rack. For frosting: combine confectioners' sugar with enough of the reserved pineapple juice to achieve a smooth spreading consistency. Frost cooled cookies. Yield: 3 dozen.
