1¼ c. dates, finely chopped
3/4 c. orange juice
1/2 c. sugar
1 T. butter
3 c. plus 1 T. flour, divided
2 t. vanilla, divided
4 oz. cream cheese
1/4 c. shortening
1 c. brown sugar
2 eggs
1 t. baking soda
1/2 t. salt

Directions:
Heat dates, orange juice, sugar, butter and 1 T. of flour in a saucepan over medium heat. Cook 10 minutes or until thick. Remove from heat. Stir in 1 t. vanilla; set aside. Beat cream cheese, shortening, and brown sugar for 3 minutes in a large bowl until light and fluffy. Add eggs and remaining teaspoon of vanilla; beat 2 minutes longer. Combine 3 cups flour, baking soda and salt in a medium bowl. Add to shortening mixture and stir until blended.

Divide dough in half. Roll one half of dough on a floured surface into a 12x9 rectangle. Spread half of date mixture over dough. Starting at the short side, tightly roll up the dough, jelly roll style. Wrap in plastic and freeze for 1 hour. Repeat with the remaing dough. Preheat oven to 350 degrees. Grease cookie sheets. Unwrap dough and using a heavy thread or dental floss, cut dough into 1/4" slices. Place slices 1" apart on cookie sheets. Bake 12 minutes or until lightly browned. Let cookies stand on cookie sheets for 2 minutes.
