9 lbs AP flour
5 T Olive oil blend
5 T Kosher salt
8 C Water
2 T yeast
2 C warm water

Directions:
Directions:
Combine yeast with 2 cups of warm water and let bloom for 5 minutes.
Combine all ingredients in a mixer along with the bloomed yeast and mix using the hook until a dough forms.
Grease bus tubs with oil and store in walk-in to rise over night, tightly cover plastic wrap.

The next day, punch down dough and divide into 4 portions.
Grease 4 half sheet trays and stretch dough until it covers the entire half sheet tray.
Add seasoning and toppings at this time before proofing.
Proof until dough rises about 1/2 inch pass the sheet tray.
Put dimples on dough gentle with your fingers.
Bake in 350F high fan until golden brown.
