One large lemon
4 large eggs
1/2 cup butter, melted
1 tsp. vanilla extract
1 1/2 cups sugar
1 (9 inch) Pillsbury piecrust, unbaked

Directions:
Directions:
Preheat oven to 350 degrees.

Wash the lemon. Cut the lemon into quarters and remove all the seeds. Do not peel the lemon. Place the cut up lemon into a high power blender. Chop the lemons until you have small pieces. Add eggs, butter, vanilla extract, and sugar. Blend until smooth. Pour the mixture into the piecrust. Bake for about 40 minutes or until set. Let the pie cool and then chill in the refrigerator.

Serve cold with a dollop of sweetened whipping cream.
