1 large bag chopped broccoli
1½ cups rice
1 large onion chopped into ¼-inch pieces
3 stalks celery finely chopped
1 stick butter
1 16 oz. Velvetta cheese, cut into blocks
1 large family-sized can of Cream of Mushroom soup

Pre-Heat Oven 350º

In a large dutch-oven pot, bring broccoli and rice to a rapid boil until rice is done. Broccoli and rice can be cooked together; drain and set aside. Meanwhile, in a large skillet or pan melt stick of butter, saute onions and celery in butter, add can of mushroom soup, stirring constantly. This recipe will require you to constantly stir, do not allow mixture to stick or scorch. Slowly add cheese and continue to stir until cheese is completely melted and smooth. Remove from heat. In a large 13x9x5 inch pan pour broccoli and rice into pan, pour cheese mixture over broccoli and rice and mix well. Bake at 350º until golden brown
