2 eggs
8 tbsp sugar
6 tbsp oil
3 c warm water
8 c flour
2 tbsp Fermipan Instant Yeast
1 1/2 tsp salt
1 tsp cinnamon
1/2 c candied peel mix *optional

1/2 c softened butter
4 c icing sugar
3 tsp vanilla
2 tbsp milk

Directions:
Directions:
In a large bowl add 4 cups of flour, yeast, cinnamon and salt. Mix well. In a medium glass mixing bowl heat water to 95º-115º, and beat in eggs. Add sugar and oil. Beat well. Add half the wet ingredients to the dry ingredients. Mix in additional flour and wet ingredients one cup at a time. Knead for 3 minutes. Add candied peel and gently incorporate. Remove from mixing bowl and, shaping into large ball, place in a greased bowl. Cover and let rise for 15 minutes in a warm place. Punch dough down and let rise for 15 more minutes.
Grease a 9X13 pan and form buns. Let rise for 45 minutes. Pre-heat oven to 350º, and bake for 15-18 minutes. Buns will be golden brown on the top. Remove from oven and brush with melted butter. Let sit for 10-15 minutes before removing from pan, and let cool.

Icing
Cream the butter, and then add icing sugar and vanilla. Beat well. Add milk one tablespoon at a time and mix vigorously until all lumps are out. Add more milk if need for desired texture.

Once buns are cool, ice the tops with icing.
