Optional garlic cloves, peeled and quartered

Rinse artichokes. Cut stems off at the base. Cut off top 1/4 of each artichoke by holding around the largest part with one hand and cutting right across the top with a sharp knife. Trim tips of the remaining petals using kitchen shears. If using garlic, push quartered cloves down and in between several of the outer leaves.

Stand artichokes in a deep saucepan or pot. Add about three inches of water. Add olive oil, lemon juice and salt to the water. Cover and boil gently until a petal near the center pulls out easily - 25 to 45 minutes, depending on the size of the artichokes. Drain and cool artichokes.

To serve, push your thumbs into the center of each artichoke and press the leaves back so you can get at the fuzzy center or choke. Scoop out the choke with with a spoon, knife tip, grapefruit spoon or melon baller. Scoop carefully so as to preserve the bottom or heart of the artichoke. Discard the choke. Serve with melted butter, aoli or mayonnaise.
