2 lbs. Yukon Gold Potatoes, pealed and cut into 1-inch thick rounds
4 T. unsalted butter (melted)
2 tsp. fresh thyme leaves
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 c. chicken stock
3 to 4 garlic cloves

Preheat oven to 500º F. with the rack in the upper-middle position.
(yes you cut the potatoes into 1 inch slices)
Toss the potato rounds with the other ingredients (except chicken stock and garlic cloves) and spread in a single layer into a 13x9 metal baking dish. Do not recommend using a glass dish because of the temperatures involved.

Bake for 15 minutes, flip the potatoes, then bake 1 minutes more.
Remove the dish from the oven and add 1 cup of chicken stock and 3 to 4 smashed garlic cloves. Return to oven and bake until most of the stock is absorbed, about 15 minutes more.

Transfer to a serving platter and pour the remaining liquid from the pan over the top of the potatoes.

3 to 4 garlic cloves was a little strong for us. I also added 1/2 tsp. ranch dressing mix. Cut back on garlic and up the ranch dressing mix.
