6-8 Gala or Jonathan apples, peeled, cored, and thinly sliced
½ C. brown sugar
½ C. white sugar
2 T. flour
1 tsp. cinnamon
Dash salt
Dash ground nutmeg
Pastry for 2-crust 9-inch pie
2 T. butter

For deep-dish pie plate:
8-10 apples
¾ C. of each sugar
3 T. flour
1½ tsp. cinnamon
½ tsp. nutmeg

Directions:
Directions:
Combine sugar, flour, spices, and dash salt; mix with apples. Allow to set for a few minutes to make their own juices. Line 9-inch pie plate with pastry. Fill with apple mixture; dot with butter. Adjust top crust, cutting slits for steam to escape; seal. Sprinkle with sugar. Place pie-crust protector or foil over edges of crust. Bake at 375º for 15 minutes, then reduce heat to 350º and bake for 45 minutes.
